When you order a whole lamb, you'll talk with the butcher and have your meat cut and wrapped per your specifications (don't worry, we'll help you!) Weights and quantities vary somewhat based on the weight of each animal, a portion typically includes:
8 lbs. leg of lamb
10 lbs. shoulder
12 lbs. loin/rib for chops or rack of lamb
5 lbs. shanks
15 lbs. other including ribs, ground lamb, and stew meat
Freezer space: 1.5 cu. feet. Picture 2 almost-full brown paper grocery sacks. (Organ meats can be included on request. Add note in special instructions when you check out.)
Our lambs live out doors and graze in our pastures as much as possible. We raise our sheep without the use of hormones or feeding antibiotics. We manage our pastures without using herbicides or pesticides.

Deposits are non-refundable and non-transferable. Your meat will be ready for your freezer after June 30th. We'll schedule a delivery date for you, and we will bill you for the balance of your purchase at that time.
Custom orders are typically priced based on the hanging weight, which is the weight of the animal after slaughter but before packaging. Cutting and packaging the meat reduces the weight by approximately 15%.
You will be billed at a rate of $6.65/lb. on the hanging weight of your portion. There is an additional $155 cut and wrap fee from the butcher. Delivery fees for each pickup location will vary.
